Sweet & Savory Stew

Time for a hardy fall stew. I have a new love for sweet potatoes but I don't like them super sugary. I like them sweet (brown sugar) and savory (salt & paprika,) with a little kick (red pepper flakes). Besides sweet potatoes, I added quinoa, carrots, roasted red peppers, onion, garlic, and cannellini beans. This could easily be a good vegetarian stew but it wouldn't be a true mid-west meal without meat. So, I threw in some pork shoulder. Topped off with chopped parsley and fresh parmesan, it was a colorful and cozy dinner.
